Strawberry and Cream Cheese Pastries

Ingredients

  • 2 puff pastry sheets
  • 170g of cream cheese
  • 250g of strawberries
  • 2 tbsp of sugar
  • 2 tsp of lemon juice
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 egg, beaten

Recipe

Step 1: Preheat oven to 2000C and line two baking sheets with parchment paper.

Step 2: In a mixer bowl, put your cream cheese (at room temperature), sugar, lemon juice, vanilla extract, and lemon zest, and beat till creamy.

Step 3: Sprinkle some flour on a smooth work surface and unroll the pastry sheets. To seal perforations, roll over the sheets using a rolling pin.

Step 4: Use a 4-inch round cookie cutter or anything similar to cut out as many complete circles as possible from each puff pastry sheet. Place them on the baking sheets, about 2 inches apart.

Step 5: Score a border, about a quarter inch, away from the edges then,, prick the center of each circle with a fork and spread a portion of the cream cheese mixture over it. The mixture should be inside the border. Then, put your strawberries on top the mof ixture, sharing them equally.

Step 6: Brush the edges of each circle with egg wash and bake for 15 to 20 minutes until they n.

Step 7: Remove from oven and allow to cool for about 5 minutes before serving.

Apple Galette

Total time: 1 hour 15 minutes

Ingredients

  • 1 puff pastry sheet
  • 3 apples, cored and sliced into crescents
  • 3 tbsp of brown sugar
  • 1 tbsp of demerara sugar
  • Juice from half a lemon
  • 1 tsp of ground cinnamon
  • A pinch of kosher salt
  • 1 egg, beaten with 1 tbsp of water

Recipe

Step 1: Preheat oven to 2000C and line a baking sheet with parchment paper.

Step 2: Put your sliced apples in a bowl and add brown sugar, cinnamon, lemon juice, and a pinch of salt. Mix until the apples are totally coated.

Step 3: Unroll the puff pastry on a lightly floured surface and cut out the biggest possible circle from the sheet. You can use a rolling pin to flatten out your puff pastry sheet until it has a 1/8-inch thickness.

Step 4: Score a 1½-inch border around the edges and arrange the coated apples on top of the dough.

Step 5: Fold the exposed edges inward toward the fruit spread atop the puff pastry sheet until all edges are folded in.

Step 6: Brush the egg wash over the folded part and sprinkle demerara sugar over it.

Step 7: Bake for 40 to 45 minutes until the fruit is tender and the crust golden. Allow cooling completely before slicing to serve.

Toffee Apple Turnover Puff Pie

Ingredients

  • 1 puff pastry sheet, thawed
  • 6 apples, peeled, cored, and quartered
  • 25g of butter
  • 50g of golden caster sugar
  • 1 egg yolk, beaten

Recipe

Step 1: Heat the butter on medium heat in a pan until it’s sizzling, scatter in your sugar, leaving about 1 tsp. Heat until the sugar has dissolved and you have a sticky mixture.

Step 2: Add in the apples and stir to coat. Cook for 5 to 6 minutes until the apples are soft and start to caramelize. Remove from heat and allow to cool completely.

Step 3: Heat your oven to 2000C with the baking sheet inside. On parchment paper, unroll your puff pastry. Spoon the apple mixture over one-half of the puff pastry sheet, leaving an exposed border of about 2 cm around the edge.

Step 4: Brush the border with the beaten egg yolk, then fold the other exposed half of the pastry sheet over the apple filling and enclose it. Pinch the edges together and use a fork to seal.

Step 5: Score triangles over the top of the pie and make four or five small slits in the center of each triangle.

Step 6: Brush all over with the remaining beaten egg yolk and scatter the remaining 1 tsp of sugar over it.

Step 7: Lift the pie as it is on the parchment paper onto the hot baking tray in the oven and bake for 25 to 30 minutes, until it’s puffy and golden brown.

Step 8: Allow to cool for about 10 minutes, then cut out the triangles following the score lines.

Strawberry Napoleons

Ingredients

  • ½ sheet of puff pastry, thawed
  • 3.5 ounces of instant vanilla pudding and pie filling
  • 1½ cups of non-dairy whipped topping, thawed
  • 1 cup of cold 2% milk
  • Fresh strawberries, thinly sliced
  • ¼ cup of confectioners’ sugar

Recipe

Step 1: Preheat oven to 2000C.

Step 2: Add pudding mix in a bowl and pour in the cold milk. Combine thoroughly, then fold in whipped topping. Refrigerate the mixture until you are ready to use it.

Step 3: Unroll the pastry on a lightly floured surface and cut it into three rectangular strips along the longer side. Then cut each strip into four squares.

Step 4: Place the squares on a baking sheet, 2 inches apart from each other, and bake for 15 minutes until they are golden brown. Take them out and allow them to cool completely.

Step 5: Cut each into two layers and set 8 tops aside. Then lay another 8 slices down on a tray, the cut side facing up and spread the pudding mixture on each and top with strawberries. Add another small amount if the pudding over the strawberries and place another pastry slice over it, cut side up. Repeat the strawberry and pudding spread and finally top with the 8 tops set aside.

Step 6: Sprinkle confectioners’ sugar over them and serve

Chocolate Braid Puff Pastry Dessert

Ingredients

  • 1 puff pastry sheet
  • Your favorite chocolate bar, flat
  • Fresh strawberries
  • 1 egg
  • 2 tbsp of water
  • Powdered sugar

Recipe

Step 1: Heat your oven to 2000C and line a baking sheet with parchment paper.

Step 2: Unroll the puff pastry and lightly flatten it with a rolling pin.

Step 3: Place your chocolate bar in the middle of the sheet and diagonally slice the exposed sides of the pastry using a sharp knife.

Step 4: Overlap them over the chocolate bar to form a nice braid effect. Then, beat the egg and water and brush the egg wash over the pastry.

Step 5: Bake for 15 to 20 minutes until the chocolate melts and the pastry is golden.

Step 6: Allow to cool and dust with powdered sugar before putting your sliced strawberries on it.

Almond Puff Pastry Dessert

Total time: 1 hour 20 minutes

Ingredients

  • 1 puff pastry sheet, thawed
  • 200g of almond paste
  • ½ cup of butter
  • ½ cup of sugar
  • 2 tbsp of all-purpose flour
  • 1 egg
  • ¼ cup of toasted, sliced almonds
  • 1 cup of confectioners’ sugar
  • ½ tsp of almond extract
  • 2 tbsp of milk

Recipe

Note: You will need a food processor for this recipe.

Step 1: Preheat oven to 2000C. Then, place the almond paste, butter, and sugar in your food processor and pulse till chopped. Add egg and flour and process till it’s smooth.

Step 2: Grease your baking sheet and unroll your puff pastry sheet on it. Then spread the paste mixture down the center of the sheet, occupying 1/3 of the sheet.

Step 3: Cut 8 horizontal strips on each exposed side of the sheet and fold them into the center, forming a v, like you would a shoelace. Pinch the ends together to seal.

Step 4: Bake for 30 to 35 minutes until it’s golden brown and allow to cool completely.

Step 5: Combine the milk, almond extract, and confectioners’ sugar to form a glaze and drizzle it over the braids.

Step 6: Sprinkle almonds over them and cut them into slices to serve.
