Chicken and Waffles is a dish originally created in Harlem, New York. Herb Hudson loved the concept of combining chicken and waffles so much that he brought this dish to Long Beach, California in 1975. He also turned this idea into a chain of 7 famous Los Angeles restaurants called Roscoe’s House of Chicken ‘N Waffles. It’s referred to as “a beloved soul food chain” by The New York Times and remains popular with celebrities.

Ingredients

4 pounds Chicken (cut into 3 1/2 pounds skin-on and bone-in drumsticks, legs, breasts and wings)

Peanut oil or vegetable shortening (4 cups)

Spice mixture

  • Cayenne pepper (1/2 teaspoon)
  • Dried oregano (2 teaspoons)
  • Garlic powder (2 teaspoons)
  • Black pepper (2 tablespoon, freshly ground)
  • Smoked paprika (1 tablespoon)

Marinade batter

  • Kosher salt
  • Large egg (1 piece)
  • Buttermilk (1 cup)

Flour mixture

  • Baking powder (1 teaspoon)
  • Cornstarch (1/2 cup)
  • All-purpose flour (1 1/2 cup)

Step by step Roscoe Chicken and Waffles Instruction

Step 1: Blend the spice mixture

In a bowl, mix together all the ingredients for the spice: cayenne pepper, garlic powder, oregano, paprika and black pepper until well incorporated. Set aside.

Step 2: Prepare the marinade

Prepare a separate bowl, then whisk together 2 tablespoons of the spice mixture, 1 tablespoon salt, egg and buttermilk. Toss the chicken parts in and give them a nice coat.

Use a Ziploc bag to store the coated chicken and refrigerate overnight or at least for 3 to 4 hours. Stir the chicken halfway or flip the bag to make sure each piece is fully coated.

Step 3: Prepare the batter (or flour mixture)

Combine the remaining spice mixture, 2 teaspoons of salt, baking powder, flour and cornstarch in a large bowl. Mix the flour mixture with 3 tablespoons of the marinade.

Open the Ziploc bag and take 1 piece of chicken, allow the excess buttermilk liquid to drip off. Toss the chicken piece in the flour mixture and flip to both sides to get a nice coat.

Repeat the same process for the remaining chicken pieces until every piece is coated thoroughly. You can also press your hands to create a thick layer of flour.

Step 4: Prepare the oven and the oil

Preheat the oven at 350-degrees F, change the rack’s position to the middle.

While waiting for the oven to heat up, add the oil to a deep fryer or wok and heat it over medium-high heat (to 350-degrees F). Once the oil reaches the required temperature, decrease the heat to maintain the temperature.

Step 5: Fry the chicken

Prepare a fine-mesh strainer, tip in the coated chicken and shake so that all the extra flour will fall off. Carefully arrange the pieces of chicken in the oil with skin side down and fry. Remember not to overcrowd the pan.

Once the chicken pieces are dropped into the pan, the temperature of the oil will be reduced to 300-degrees F. The secret is to keep the temperature between 300 – 325 degrees during the frying process. This will allow the chicken to be cooked through without the crust being burned and make the perfect Roscoe Chicken and Waffles recipe.

Let the chicken pieces turn golden brown on one side and don’t move them until they’re cooked for at least 3 minutes. Otherwise, the coating might be rubbed off from the chicken.

Flip the chicken carefully with a tong and continue frying until the other side also changes to golden brown. This will take about 3 minutes.

Step 6: Bake the chicken

Transfer the fried chicken into the oven’s wire rack and bake for 5 – 10 minutes. Or you can check the doneness by inserting a thermometer into the thickest part of the chicken breast and check if it reads 150-degrees F.

Once the pieces of chicken are baked through, place them on a cooling rack and let the excess oil drain. Serve immediately after cooking.

  • All-purpose flour (3 1/4 cups)
  • Large eggs (2 pieces, separated)
  • Unsalted butter (7 tablespoons, melted plus more for greasing)
  • Active dry yeast (1/4 teaspoon)
  • Sugar (1/4 teaspoon plus 1/3 cup, divided)
  • Milk (2 3/4 cups, divided)

Instructions

Step 1: Preheat the oven at 250-degrees F. Warm over low heat 1/4 cup of milk plus 1/4 teaspoon sugar using a medium saucepan (for about 2 minutes). Remove from heat and add 1/4 teaspoon of yeast. Let the mixture bloom until foamy (about 15 minutes).

Step 2: Add in the remaining milk-yeast mixture, egg yolks, melted butter and sugar. Give it a nice whisk until all the ingredients are well combined. Pour in the flour, whisk and alternate with the remaining milk until the mixture is smooth.

Step 3: Prepare a stand mixer attached with a whisk, beat the egg whites over high speed until stiff (about 3 minutes). Then mix them with the waffle batter.

Step 4: Prepare a waffle iron and grease it. Pour in 1/2 cup batter and cook. Read the manufacturer’s instructions for precise cooking time. While you fry the chicken, keep the waffles on a sheet pan so they can stay warm.
