The Lemon Cake Recipe
– For the cake: unsalted butter, all-purpose flour, baking powder, salt, sugar, eggs, lemon zest, and juice

For the meringue pie filling: egg whites from large eggs; fresh lemon juice; granulated sugar

Now we need to make sure our oven is preheated to 350 degrees F before moving forward. Next, grease and flour three cake pans – this will help them to release easily after baking. Sift together the flour, baking powder, and salt before setting aside. In a large bowl cream together the butter and sugar until light and fluffy.
Step 3: Add eggs one at a time, beating well after each addition. Stir in lemon zest & juice (reserving some for later). Gradually add dry ingredients to wet ingredients mix well.
Step 4: Pour batter into prepared pans bake for 30-35 minutes or until a toothpick inserted in the center comes out clean allow cakes to cool COMPLETELY! Now it’s time to assemble our tower frosting between each layer with reserved lemon juice pipe meringue pie filling onto the top of the cake using a star tip
