The Lemon Cake Recipe
Ingredients:
– For the cake: unsalted butter, all-purpose flour, baking powder, salt, sugar, eggs, lemon zest, and juice
– For the frosting: confectioners’ sugar, softened unsalted butter, lemon juice, and zest
Instructions:
Preheat oven to 350 degrees F. Grease and flour two round cake pans. Sift together the flour, baking powder, and salt; set aside. In a large bowl cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the lemon zest and juice. Gradually add the dry ingredients to the wet ingredients mix well. Pour batter into prepared pans bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow cooling completely before frosting (or any other decoration).

Lemon Cake Tower Recipe No.2
Ingredients:
For the meringue pie filling: egg whites from large eggs; fresh lemon juice; granulated sugar
For the cake: unsalted butter, all-purpose flour, baking powder, salt, and eggs.
Instructions:
Step 1: Make meringue pies by combining egg whites (at room temperature) with a small amount of lemon juice (~25 ml or ~0.85 fl oz). Beat on high until stiff peaks form (when you lift your beaters out of the mixture it should remain in place without falling over), then continue to add more lemon juice until desired consistency has been reached.
Step 2: Continue beating for another 30 seconds – this will ensure that it holds its shape once piped onto the cakes later on! Now we need to make sure our oven is preheated to 350 degrees F before moving forward. Next, grease and flour three cake pans – this will help them to release easily after baking. Sift together the flour, baking powder, and salt before setting aside. In a large bowl cream together the butter and sugar until light and fluffy.
Step 3: Add eggs one at a time, beating well after each addition. Stir in lemon zest & juice (reserving some for later). Gradually add dry ingredients to wet ingredients mix well.
Step 4: Pour batter into prepared pans bake for 30-35 minutes or until a toothpick inserted in the center comes out clean allow cakes to cool COMPLETELY! Now it’s time to assemble our tower frosting between each layer with reserved lemon juice pipe meringue pie filling onto the top of the cake using a star tip
For the decoration: lemon slices, blueberries
